Cherry Panna Cotta Tart Recipe

  • 125g wheat flour
  • 60gr butter
  • 50g caster sugar
  • 1 egg, yolk only
  • pinch salt
  • 300g yoghurt
  • 1 package vanilla sugar
  • 1 1/2 tsp gelatin
  • 1/2 tsp lemon juice
  • 500g pitted cherries, halved
  • 2 tbsp sugar
  • 1 1/2 tsp gelatin
  • 1/2 tsp lemon
  • 1/4 cup water
  • mint leaves


  1. Mix soft butter with sugar, add yolk, then add salt and flour.
  2. Knead until dough is smooth and uniform. Refrigerate about 30 minutes.
  3. Preheat over to 180C. Remove dough from fridge, and place in tart baking tray, prick with fork and cover with aluminium foil. Bake approx. 20 minutes.
  4. Put cherries into pot, add sugar, lemon juice and water. Boil 5 minutes, then let cool.
  5. In separate dish, mix gelatin with 2 tbsp water. When gelatin dissolves, add to cherries.
  6. Warm up yogurt over water bath. Add vanilla sugar and lemon juice.
  7. In separate dish, dissolve gelatin in 2 tbsp water and add to yogurt.
  8. Put panna cotta and cherry jelly in the fridge.
  9. When they are half-hardened, arrange panna cotta on the shortcrust tart, return to the fridge.
  10. After 10-15 minutes, arrange cherry jelly on the top of the tart. Return to fridge for about 1 hour.
  11. Garnish with mint leaves and serve.
