Spinach Quiche Recipe

Ingredients

  • 5 cups fresh spinach, chopped
  • ½ sweet onion, chopped
  • 1 tsp garlic, chopped
  • 3 leaves basil, chopped
  • 2 tbsp oil
  • 4 eggs
  • 1 cup milk
  • 1/3 cup mayonnaise
  • 1 1/2 cups cheddar cheese, shredded
  • 1/8 tsp salt
  • ½ tsp black pepper
  • 1 dash paprika
  • 1 dash nutmeg
  • 1 dash dried oregano
  • 2 pie crusts

Preparation

  1. Preheat the oven to 375F
  2. Put oil in skillet and cook the onions until clear, about 3 minutes
  3. Add spinach, garlic, basil, salt and pepper to the skillet and cook until spinach is wilted
  4. In a bowl, mix eggs, milk, mayonnaise, paprika, nutmeg and oregano until blended
  5. Combine the spinach mixture into the milk and egg mixture, add the cheese
  6. Pour half into each pie crust
  7. Place in oven and cook for 30 - 40 minutes, or until edges are golden brown.
