Salmon Crostini Recipe

- smoked salmon
- sliced bread (or baguette, or crackers)
- garlic & herb cream cheese
- fresh dill sprigs
- olive oil
- Cut your bread into small bite-size pieces, brush lightly with olive oil and bake at 350F for approximately 20 minutes, until well toasted (but not burned!).
- Cut the smoked salmon into strips, about 3/4" wide and 5" long, it doesn't need to be perfect! Place a spoonful of cream cheese on the end of each strip and roll. Place each roll onto the mini toasts you have prepared, top with caviar and garnish with a piece of dill. For an even easier preparation: spread the cream cheese on each toast and top with a piece of smoked salmon.
If you want to prepare the cream cheese mixture yourself, combine 1/2 cup cream cheese with 2 tbsp chopped green onions, 1 tsp chopped fresh dill, 1/2 tsp freshly grated lemon rind, 2 tbsp chopped fennel bulb, and spices (garlic, sea salt, dried parsley, citrus pepper). For a lower fat option, substitute cream cheese for strained low-fat yogurt; set the yogurt in a coffee strainer in a strainer/sieve/colander and let drain in fridge for a few hours.
