Chicken Stir-Fry with Noodles

Ingredients

  • ¾ cup Asian salad dressing
  • 1 tbsp oil
  • 5 chicken thighs, sliced
  • 1 cup zucchini, sliced
  • 1 cup bean sprouts
  • 1 cup red pepper, sliced
  • ¼ cup fresh basil, chopped
  • ½ cup peanuts, chopped
  • ½ package spaghetti (or 3 packages of udon noodles), cooked
  •   sesame seeds

Preparation

  1. Heat half the salad dressing & oil
  2. Add chicken and stir-fry until almost fully cooked. Add vegetables and stir-fry quickly so that vegetables remain crisp
  3. Pour rest of salad dressing over chicken/vegetable mixture and serve over noodles
  4. Top with basil, peanuts & sesame seeds
