Eggs & Avocado Toast Recipe

Ingredients

  • 2 eggs
  • 2 slices whole grain bread
  • 1 avocado
  •   shaved parmesan
  •   salt
  •   pepper

Preparation

Hard boil the egg (or poach): Place eggs in pot or deep saucepan and cover with 1-2" of cold water with 1/2 tsp salt. Heat over high heat and bring the water to a full rolling boil. Turn off heat, keep on hot burner for 6-10 minutes. Strain and run under cold water to stop the cooking.

Meanwhile, toast the bread and mash the avocado onto each slice of toast. Peel the eggs, slice in half and place on toast. Sprinkle with cheese, salt and pepper.
